Eclair pastry shop in Apulia “ u’choux”, borns as a healthy pastry in the little village of Rutigliano in the province of Bari, little city based on grapes agriculture famous all over the world and the country of the baked clay from which starts the famous “Fiera del Fischietto di Sant’Antonio Abate” that takes place in January.
Me, Domenico Leone, after different jobs all over the world, decided to come back to my land to open my pastry shop, a dream that I had since I was a child. Greedy as I am I love to make people happy with my cakes, the little ones and the elders because as I always say : “ A good lunch or a good dinner should NEVER be ended without a dessert”. For this reason I decided to spend my time in the research of healthy foods, in my receipts I use untreated raw sugars, raw wheats, lactose – free butters, fresh eggs from hens raised on site. Basic products of my Land such as semolina, Toritto almonds, extra virgin olive oil, our grapes, or fruits that we collect in the right moment of maturation. We directly candied them and we use them for our receipts, we do not use chemical emulsifiers nor preservatives, because my son is my first client.
