The origins: the old workshop.
Manu in Pasta was born as a neighborhood “workshop” which start to produce fresh handmade pasta in September 2008. Emanuela, also called “Manu” Ranzoli found in 2008 an already existing historic workshop in Ferrara. The special recipe of a very good, soft, tasty and fragrant “piadina”, which is a thin Italian flatbread, typically prepared in Romagna, had been handed down to the previous managers, which has always become the trademark of Manu in Pasta too: in his honor the traditional piadina of Manu in Pasta is still called "Piadina della Bruna". The shop almost immediately began to establish itself as one of the reference stores in Ferrara and also began the collaboration with various local administrators (bars, pubs and restaurants) who appreciate the excellent quality of Manu products which guarantee a return in terms of customer loyalty. the final. In 2013, with the aim of expanding the production space, Manu set up a second laboratory in Via Madama 45 a (100 meters away) where there are more suitable spaces for the development of the production. Since 2017 this has become the reference point of Manu in Pasta.
The shop (now run by two young boys) is in Via Scandiana 7b, in the center of Ferrara, next to Palazzo Schifanoia and in front of the church of S. Maria in Vado; It is a really famous place where the people of Ferrara always love to go to buy its speciality for their parties and tasty things for everyday dinner and which over time continues to be a reference point for the sale of our “piadina”.
Not only Italian flatbread is product by La Manu in Pasta, in addition to the classic and special “piadine”, produces crescioni or cassoni (flatbread already stuffed with vegetables, salami and cheeses). However, the creativity and study of the Gourmet world never stops, for this reason there is the birth of new fresh pasta with and without filling, such as: pumpkin cappellacci (a fresh handmade kind of past with pumpkin whose name cappellaccio comes from the shape of the hat of local peasants in Ferrara), Tortellini, Cappelletti, Lasagne al Ragù and other Italian specialties.
